MARINADE Dark Beer | Lime Juice | Oregano Garlic | Bay Leaves
Submerge the pork cubes in a marinade of dark beer, lime juice, oregano, garlic, and bay leaves for at least 3 hours or overnight.
Remove pork from the marinade and brown on all sides. Remove from pot, and caramelize onions in the same pot. Add garlic and chipotle peppers.
Add the pork back into the pot and stir in the beer and chicken broth. Simmer the pork in the braising liquid for 2-3 hours until fork-tender.
Stir in chopped cilantro and freshly squeezed lime juice and simmer for another 10 minutes. Serve with tortillas and salsa or over rice.
