Place a sheet of foil lengthwise on a rack in a roasting pan. Place another sheet widthwise. Put the ribs on top of the foil and gently massage a generous amount of rub into the meat.
Fold the foil over the ribs and seal the edges together. Pour liquid into the bottom of the roasting pan and cook for about 3 and ½ hours.
Once they are tender, brush the sauce on both sides. Then broil or place the ribs on the grill, for a few minutes to caramelize the sauce.
