If you wet-brined the turkey, then remove it from the brine, rinse thoroughly, and pat dry with paper towels. To achieve that irresistibly crispy skin, let it sit uncovered in the fridge overnight.
Place turkey in a roasting pan, tuck wing tips underneath and tie the legs together with kitchen twine. Rub herb butter all over and under the breast skin.
Add stock to the bottom of the pan and stuff the turkey with aromatics. Butter one side of heavy-duty aluminum foil, and cover the breast completely.
Place in the oven and roast about 15 minutes per pound. Baste once an hour, removing the foil an hour before the turkey should be done.
When the internal temperature reaches 160°-165°, remove the roasted turkey from the oven and let it rest for at least half an hour before you slice it.
