Ingredients
1cupall-purpose flour
1teaspoonbaking powder
¼teaspoonsalt
¾cupgranulated sugar
7tablespoonsunsalted butter, melted
½cupwhole milk
1teaspoonvanilla
4tablespoonscocoa
Topping
¾cuplight brown sugar
2tablespoonsgranulated sugar
4tablespoonscocoa
1 teaspooninstant espresso powder
1 ¾cupsboiling water
Instructions
Preheat oven to 350. Lightly butter an 8-inch baking dish or pan.
Mix flour, baking powder, salt, granulated sugar, and 4 tablespoons cocoa in a medium bowl. Whisk until well blended.
Add butter, milk and vanilla and whisk until blended. Pour batter into prepared dish.
Whisk together brown sugar, and 4 tablespoons cocoa. Sprinkle over batter.
Add espresso powder to the water and stir to blend. Then slowly pour boiling water over the topping until the dish is completely covered in water. Use all the water.
Bake about 30 minutes or until center is lightly set. The cobbler will still jiggle so don't overcook.
