Ingredients
1lbground chicken
1onion, chopped
½green pepper, chopped
½red pepper, chopped
2clovesgarlic, finely minced
1can petite diced tomatoes, undrained
1small can diced green chilis
2cupsunsalted chicken broth
1cupquick cooking brown rice or long grain white rice
1tablespoonSriracha sauce
1teaspoonsalt
1teaspoonfreshly ground black pepper
1cupgrated Cheddar or Parmesan cheese
¼cupchopped parsley
Instructions
Saute peppers, onions, and garlic for about 3 minutes on medium-high heat. Add ground chicken and cook about 10 minutes on medium heat.
Add broth, rice, tomatoes, green chilis, Sriracha, salt, and pepper.
Bring to a boil then cover and simmer 20-30 minutes until rice is done and most liquid is absorbed. Serve with grated cheese and parsley sprinkled on top.
