Chickpea Salad Recipe

Chickpea salad that's super easy and healthy, with just chickpeas, parsley, onion, and capers, mixed with a lemon vinaigrette.

Ingredients

  • 2 cans chickpeas rinsed and drained
  • 1/3 cup chopped fresh parsley
  • 2-3 tablespoons finely minced red onion
  • 1 3.5 oz. jar capers drained
  • 1/3 cup lemon vinaigrette
  • Good splash of red wine vinegar
  • Salt/pepper to taste

Instructions

  • Gently stir ingredients together. Store in refrigerator.
