Fresh salsa made with garden fresh tomatoes, bell peppers, Vidalia onions, and herbs. It's a great sweet and savory appetizer!

1/2cupchopped Vidalia onion
4cupschopped plum tomatoes
1/2cupchopped red bell pepper
1/2cupchopped green bell pepper
1/2cupchopped yellow bell pepper
1wholejalapenoseeded and ribs removed, finely minced (optional)
1/4cupchopped green onionswhite and green parts
2tablespoonsextra virgin olive oil
2tablespoonsapple cider vinegar
1teaspoonkosher salt(more to taste)
1teaspoonfreshly ground black pepper
2tablespoonschopped fresh herbs(parsley, cilantro, or basil or a combination)
Juice of one lime
Place all ingredients in a large bowl and mix gently. Store in the refrigerator. Will keep for several days.
