A quick and tasty one-pot meal with beef, rice, and tomatoes.

2beef bouillon cubes
1canpetite diced tomatoesundrained
1green peppersliced or chopped
1cupgrated Cheddar cheese
Saute onion in large skillet. Add beef and cook until browned. Drain and return to skillet.
Add 2 cups water, bouillon cubes, and 1 cup uncooked rice. Bring to a boil then cover and simmer for 15-20 minutes or until rice is done.
Add 1 can petite diced tomatoes with liquid. Add green pepper. Cover and simmer until pepper is soft but still a little crispy.
Top with cheese and allow to melt.
