Original California Skillet

A quick and tasty one-pot meal with beef, rice, and tomatoes.

  • 1 lb. ground beef
  • 1 small onion chopped
  • 2 beef bouillon cubes
  • 2 cups water
  • 1 cup uncooked rice
  • 1 can petite diced tomatoes undrained
  • 1 green pepper sliced or chopped
  • 1 cup grated Cheddar cheese


  • Saute onion in large skillet. Add beef and cook until browned. Drain and return to skillet.
  • Add 2 cups water, bouillon cubes, and 1 cup uncooked rice. Bring to a boil then cover and simmer for 15-20 minutes or until rice is done.
  • Add 1 can petite diced tomatoes with liquid. Add green pepper. Cover and simmer until pepper is soft but still a little crispy.
  • Top with cheese and allow to melt.
