6cupslettuce, chopped or shredded (iceberg or Romaine)
1cupcherry tomatoes, sliced in half
1cuphamburger pickles
Instructions
Sweet potato fries:
Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
Thinly slice 1 large sweet potato into ¼ inch thick, and into strips.
Place sweet potato strips in a large mixing bowl. Toss evenly with 2 tablespoons olive oil1 teaspoon saltand ½ teaspoon black pepper.
Line the sweet potatoes on the prepared baking sheet.
Bake for 9 minutes, flip each potato strip and then bake for an additional 7-9 minutes (until crispy and slightly golden).
Hamburger:
Place 1 pound ground beef in a large skillet. Season with 1 teaspoon salt, ½ teaspoon black pepper, ¼ teaspoon garlic powder, and 1 teaspoon dried oregano. Cook over medium heat until the meat is no longer pink. Spoon cooked meat into a small paper-towel lined bowl and set aside. Note: If you're using a fattier beef, you may need to drain the grease before continuing. A small amount (about a tablespoon) of grease in the pan is fine.
Onions:
Thinly slice 1 medium yellow onion. Melt 3 tablespoons butter in a large skillet. Add sliced onions and cook over medium-high heat, stirring frequently.
Onions will cook down and become thin and golden, about 10-12 minutes. Place in a separate bowl and set aside.
Sauce:
In a small mixing bowl add mayonnaise, barbeque sauce, pickle juice and dijon mustard. Stir ingredients well until fully combined.
Assembly:
Assemble bowls: add lettuce, ground beef, sweet potato fries, sliced tomatoes, sliced pickles and generously drizzle with sauce. Enjoy right away!
