Ingredients

olive oil or sunflower oil

mango chutney

fresh lemon juice

bunches kale chopped and stemmed (about 16 cups)

mixed chopped dried fruit (apricots, dates, raisins, cranberries)

Instructions
In a blender, puree the oils, chutney, lemon juice, garlic, salt, and pepper until smooth.
In a large bowl, toss the kale, dried fruit, and sunflower seeds with the dressing.
Season with salt and pepper as needed.
