Ingredients
4large peaches, (enough to make 2 cups pureed)
1cupchopped Vidalia onion
2finely chopped jalapeno peppers, (remove seeds unless you want a lot of heat)
2clovesfinely minced garlic
1tablespoonolive oil
1cupketchup
⅓cupapple cider vinegar
¼cupgood quality bourbon
2tablespoonsDijon mustard
¼cupmolasses
1cupdark brown sugar
1tablespoonfresh lemon juice
2tablespoonsWorcestershire sauce
½teaspoonchili powder
¼teaspoonground ginger
⅛teaspoonground cloves
⅛teaspoondry mustard
½teaspoonkosher salt
freshly ground black pepper
Instructions
Peel and coarsely chop peaches then puree in a blender.
In large heavy saucepan, saute onion, jalapeno, and garlic in olive oil until softened. Add peach puree and remaining ingredients. Stir until well mixed and bring to a boil.
Turn down to simmer and cook uncovered, stirring occasionally, for about 30 minutes.
