Ingredients
½jalapeno pepper, minced
3scallions, minced
½cupchopped roasted red pepper
4cupsspinach, chopped
¼cupchopped fresh parsley
1cupchopped grape tomatoes
2tablespoonsfeta cheese
8large eggs
¼cupwater
Instructions
Preheat oven to 375 and spray an ovenproof skillet with cooking spray. Saute peppers, scallions, parsley, and spinach until tender. Sprinkle with salt and pepper and stir. Add grape tomatoes and saute for about 1 minute.
Whisk eggs and water in a bowl, then add feta, salt and pepper, and stir. Add to skillet and stir gently to mix. Bake 20-25 minutes until center is set.
This quiche will keep in the refrigerator for a few days and heats up easily in the microwave.
