Boneless skinless chicken breasts cook in a honey garlic sauce, then get shredded and stirred back into the thickened sauce. Serve over rice with green onion and sesame seeds.
Spray a 4 or 5-quart slow cooker insert with nonstick cooking spray. Lay 4 large boneless skinless chicken breasts in the bottom in a single layer.
In a medium bowl, stir together 1/2 cup low sodium soy sauce, 1/2 cup honey, 1/4 cup hoisin sauce, 2 tablespoons rice wine vinegar, 1 tablespoon fresh minced garlic, 2 teaspoons fresh minced ginger, and 1/4 teaspoon dried red chili flakes.
Pour the honey garlic mixture over the chicken.
Cover and cook on low for 5 to 6 hours or on high for 2 to 3 hours. The chicken is done when the internal temperature reaches at least 165 degrees F.
Move the chicken to a cutting board and leave the sauce in the slow cooker.
Shred the chicken with two forks or with an electric hand mixer.
In a small bowl, stir together 2 tablespoons cornstarch and 3 tablespoons water until smooth.
Pour the sauce from the slow cooker into a medium saucepan. Bring it to a boil over high heat, then whisk in the cornstarch mixture. Reduce the heat to medium high and boil for 5 minutes, whisking constantly.
Return the shredded chicken to the slow cooker. Pour the thickened sauce over top and stir to coat.
Scatter diced green onion and sesame seeds over the top, if using. Serve hot.
