Instructions
Preheat your air fryer to 400 degrees F for at least 5 minutes.
Pat 2-3 pounds beef roast (such as eye of round, top round, bottom round) dry with paper towels to remove any excess moisture. Rub the entire surface of the roast with 2 tablespoons olive oil, ensuring it's evenly coated.
In a small bowl, mix together 2 teaspoons garlic powder, 2 teaspoons onion powder, 1 teaspoon dried oregano, 1 teaspoon dried thyme, 1 teaspoon dried rosemary, salt, and black pepper.
Rub the seasoning mixture all over the beef roast, covering it thoroughly. Pat it in so that it adheres well.
Place the seasoned beef roast in the preheated air fryer basket. Cook at 400 degrees F for 20 minutes to sear the exterior and lock in juices.
In a mixing bowl, combine 4 carrots, peeled and sliced and 2 cups potatoes, cut into pieces. Season with olive oil, salt and pepper until evenly combined.
After 20 minutes, reduce the temperature to 350 degrees F. Add the potatoes and carrots around the roast and continue cooking for an additional 20-25 minutes, or until the roast reaches your desired level of doneness. For medium-rare, aim for an internal temperature of 130-135 degrees F, and for medium, aim for 140-145 degrees F.
Once the roast reaches the desired doneness, transfer it to a cutting board and tent loosely with aluminum foil. Allow the roast to rest for 10-15 minutes before slicing. This allows the juices to redistribute throughout the meat, resulting in a juicier roast. Allow the potatoes and carrots to cook for an additional 5-7 minutes if they are not cooked through.
Slice the roast beef against the grain into thin slices and serve hot.
Notes
Make sure you select a cut of beef that fits in the air fryer. I wouldn’t go more than 3 pounds.
Cooking time may vary depending on the size and thickness of your beef roast and the model of your air fryer. Use a meat thermometer to ensure the roast reaches your desired level of doneness. Medium-rare, internal temperature of 130-135°F (55-57°C), and medium 140-145°F (60-63°C).
Store any leftover roast beef in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the microwave or oven before serving.
