Ingredients
6ouncesquality feta cheese
3ouncescream cheese, room temperature
2tablespoonsfreshly squeezed lemon juice
zest from 1/2 lemon (optional)
4tablespoonsextra virgin olive oil
honey
fresh thyme
¼cuppine nuts, toasted*
Instructions
Crumble 6 ounces quality feta cheese and place in the bowl of the food processor along with 3 ounces cream cheese, room temperature. Pulse until the cheeses are well blended.
Add 2 tablespoons freshly squeezed lemon juice, zest from 1/2 lemon (optional), and 4 tablespoons extra virgin olive oil and pulse until dip is smooth and creamy. Remove to a shallow dish and refrigerate for up to three days.
Drizzle with honey and sprinkle fresh thyme leaves over the dip before serving. We like to also add toasted pine nuts. Serve lightly chilled or at room temperature.
Notes
To toast the pine nuts add them to a small dry skillet placed over medium heat. Watch the skillet like a hawk because the nuts will not take long to toast and can burn easily.
