This gorgeous and colorful Apple Pomegranate Salad checks every box for a perfect fall salad. We added pomegranate seeds for a pop of red, along with walnuts and sliced apples to give crunch and sweetness. This salad is so quick and easy to put together, you’ll find yourself turning to it again and again.
My husband and I eat a lot of salad all year long so I’m always finding ways to change it up. It’s so easy to fall into a salad rut and have the same thing week after week. For this one, I wanted to keep it easy so I could toss it together on a busy weeknight, but I also wanted to be sure there was some complexity in the flavors.
After a few iterations, I think we’ve hit on the perfect quick and easy fall salad that is customizable and works well with almost any meal.
Testing results for apple pomegranate salad
- We tested with arugula and spinach. This salad also works with just arugula or a combination of arugula and baby kale or do a mix with watercress, arugula, green leaf, and spinach or kale.
- I used this salad as a side for dinner for four people. It would also make a great main dish for two people with some grilled chicken or shrimp.

Pomegranate seeds: You can purchase these in a little cup in the product section, or cut open a pomegranate and use fresh seeds. It’s actually pretty easy to get the seeds out of a pomegranate and of course, fresh is always best.

Apple Pomegranate Salad Recipe
Ingredients
- 2 cups lettuces: arugula, spinach, green leaf, baby kale
- 1 cup pomegranate seeds
- 1 sweet apple, sliced
- ¼ cup chopped walnuts, toasted** see note below for instructions
- 2 tablespoons crumbled feta cheese
- salt and pepper to taste
Dressing:
- ⅓ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- 2 tablespoons real maple syrup (not pancake syrup)
- pinch each of salt and pepper
Instructions
- Place 2 cups lettuces: arugula, spinach, green leaf, baby kale into the mixing bowl. Add 1 cup pomegranate seeds, 1 sweet apple, sliced, 1/4 cup chopped walnuts, toasted**, and 2 tablespoons crumbled feta cheese. Sprinkle with salt and pepper to taste.
- In a separate small bowl, prepare the dressing. Whisk together 1/3 cup extra virgin olive oil, balsamic vinegar,1/4 cup balsamic vinegar, 2 tablespoons real maple syrup (not pancake syrup), and a pinch each of salt and pepper.
- Pour the dressing over the salad ingredients and mix well. Add salt and pepper as needed.
