We love the crunchiness of these Easter bird’s nest cookies and that they don’t need to be refrigerated. They’re great to take to parties since they’re so easily transported.

Or you could use them as an edible decoration on your Easter table.

This is a quick and easy recipe that takes just ten minutes to put together. It takes longer for the cookies to set than for you to make them.

Change it up: We decorated these haystacks for Easter, but you can change the Cadbury eggs for M&Ms or other candies for different holidays.

These cookies are a favorite at baby showers and my grandkids request them for their birthdays too!

Ingredient notes for bird’s nests

There are only four ingredients in this simple recipe! You’ll love how easy it is. Here are a couple of notes:

Ingredients for a dessert: a bowl of crunchy sticks, bowls of milk and dark chocolate chips, pastel-colored candies, a teal spatula, and metal scoops on a marble surface.

Chocolate chips: Our testing found that tasters preferred semi-sweet chocolate chips, but you can swap in milk chocolate if you prefer.

Peanut butter chips: You can use butterscotch chips instead of peanut butter.

Chow mein noodles: If you can’t find chow mein noodles, use straight mini pretzels.

Cadbury mini eggs: The possibilities are endless for decorations. We used Cadbury mini eggs, but you could use Reese’s peanut butter eggs, M&Ms, milk chocolate whoppers, jelly beans, or any small candy you like.

How to make Easter bird’s nests

Prepare the chocolate mixture.

Line a baking sheet with parchment paper. First you’ll need to melt the chocolate and peanut butter chips. We found the easiest way to do this is using a large bowl and microwave them at 50% power.

Note: You can use the double boiler method, but it takes longer and is more work.

Toss the noodles with the chocolate.

Add the chow mein noodles to the melted chocolate and stir until the noodles are fully covered by the chocolate peanut butter mixture.

Make the nests.

Use a large spoon to scoop out one tablespoon of the noodle mixture and place it on the parchment paper. Use the spoon to make a slight impression in the nest and then immediately press in 2 mini-eggs and flatten slightly to hold them.

Allow the cookies to cool and set for 10-15 minutes before eating.

Easter Bird’s Nest Recipe

This Easter Bird's Nest Recipe is a simple no-bake treat made with melted chocolate and peanut butter, crunchy chow mein noodles, and mini Cadbury eggs.

Ingredients 

  • 1 cup semi-sweet chocolate chips
  • 1 cup peanut butter chips
  • 4 cups chow mein noodles
  • mini eggs for topping

Instructions 

  • In a large microwave safe bowl, combine 1 cup semi-sweet chocolate chips and 1 cup peanut butter chips. Melt in the microwave at 50% power for 1 minute. Stir and then continue melting in 30 second increments at 50% power until fully melted and smooth.
  • Add 4 cups chow mein noodles and stir until the noodles are fully covered by the chocolate peanut butter mixture.
  • Scoop one tablespoon of the noodle mixture onto the parchment paper. Immediately press in 2 mini eggs and flatten slightly to hold them.
  • Allow the cookies to cool and set for at least 10-15 minutes prior to eating.

Notes

If you can’t find chow mein noodles at your grocery store, straight pretzels will work just as well.
If you would like a gooier treat, use cream eggs instead of mini eggs. Just be sure to remove the foil first.
