Brownie Pizza

Ingredients 

  • 1 package brownie mix
  • cup vegetable oil
  • 2 eggs
  • 3 tablespoons water
  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries

Instructions 

  • Preheat the oven to 350 degrees. Grease a small pizza pan with cooking spray and set aside.
  • In a large bowl combine the brownie mix, vegetable oil, eggs and water. Whisk until just combined, do not overmix.

  • Pour the brownie mix into the pizza pan and spread evenly, then bake for 20 minutes or until a knife comes out clean. Remove from the oven and allow to cool completely.

  • While the brownie is cooling, in a medium mixing bowl beat the cream cheese and vanilla extract until smooth.

  • Slowly add in the powdered sugar and mix until it is smooth and creamy.

  • Once the brownie is cooled, spread the frosting over the top evenly.

  • Slice the strawberries and arrange all the berries on the top in any pattern desired. Serve right away or refrigerate.

Notes

  • Store in an airtight container in the fridge for up to three days. You can also freeze in a freezer bag for up to three months.
  • Be careful not to overcook the brownie or it may be difficult to cut.
  • You can use a store bought or homemade brownie mix, one box is about 5 cups.
  • You can use any kind of berry or fruit you prefer, strawberries, blueberries and raspberries are perfect for the fourth of July and can even be arranged in the shape of a flag!
  • Can I just use store bought frosting? In a pinch you can use store bought frosting or cool whip also works great for this recipe!
  • Can I make this without a pizza pan? You can always make this recipe using just a 9×13 baking dish, or this cookie cake pan also works great as well.
