As a grandmother of six, I’m always looking for easy recipes that kids will eat. These buffalo chicken pinwheels fit that requirement perfectly. Of course, not all of them like the little hint of spice, but the ones who do like a little heat absolutely love these pinwheels. They’re great for after-school snacks and perfect for your gameday spread.

  1. We’ve tested these pinwheels with pie dough as well as puff pastry. While puff pastry is our preference, sometimes you don’t have time for it to thaw and the pie dough works just fine. Please see our tips below the recipe card for details on working with pie dough for this recipe.
  2. You can use barbecue sauce instead of buffalo sauce if you want a different flavor profile.

Here are a few things to know about the ingredients in this recipe.

Puff pastry: Use a good quality puff pastry. Our favorite is Dufour, although it’s not always available at regular grocery stores. You should be able to get Peppridge Farm puff pastry and it also gives good results.

Buffalo sauce: Our go-to is always Frank’s. It’s consistently good and the flavor profile is complex without being overwhelmingly hot.

How to make buffalo chicken pinwheels

  1. Mix cream cheese, chicken, and seasonings until creamy. Add buffalo sauce and mix until fully incorporated. We recommend using a hand mixer or stand mixer for this process, especially when blending the cream cheese.
  2. Spread the buffalo chicken mixture over the flattened puff pastry, leaving about a half-inch border around the edges.
  3. Roll into a log and cut 12 pinwheels.
  4. Bake and serve.

  • 4 ounces Philadelphia cream cheese (softened)
  • 2 cups shredded/pulled chicken (cooked)
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon steak seasoning
  • cup buffalo sauce
  • 1 large sheet of puff pastry, thawed
  • 1 cup shredded mozzarella

Instructions 

  • Preheat the oven to 425 degrees F and line a baking sheet with a silicone baking mat or parchment paper. Set aside.
  • In a medium bowl, mix together cream cheese, chicken, Italian seasoning, paprika, garlic powder, onion powder, and steak seasoning.

  • Add in the buffalo sauce and mix until fully incorporated.

  • Unroll and flatten your sheet of puff pastry.

  • Spoon the Buffalo chicken mixture over the puff pastry and spread until evenly distributed. Leave about 1⁄2 inch of space around the perimeter.

  • Take one end of the puff pastry ( the long edge) and carefully and tightly roll it up into a log shape.

  • Use a thin piece of string or a sharp knife, but the log into 12 even pinwheels.

  • Place each pinwheel on your prepared baking sheet then sprinkle the tops with the remaining mozzarella cheese.

Can I use a different sauce?

We love these buffalo chicken pinwheels made as barbecue chicken pinwheels. Substitute the same amount of barbecue sauce for the Buffalo sauce.

Can I use pie dough instead of puff pastry?

Buffalo chicken pinwheels can also be made using refrigerated pie dough rather than puff pastry. Roll the dough out until it is thin, then follow steps 5-9. Bake for 25-28 minutes at 425 degrees F.
