Chicken Lettuce Wraps with mango and cilantro are a fresh and healthy way to enjoy chopped chicken salad. There’s no mayonnaise, just lime juice and white balsamic vinegar reduction. Use large lettuce leaves and drizzle with Sriracha for a perfect blend of flavors!

We would eat Chicken Salad with Grapes all the time if we could, but given the mayonnaise and sour cream dressing, we try to limit it to special occasions.

This chicken mango salad, however, is light and fresh and has no mayonnaise at all. And it makes the best chicken lettuce wraps.

Best chicken for lettuce wraps

You can use any chicken in this recipe, but I like rotisserie chicken because it has such good flavor and it’s easy. If you want to use just chicken breasts, you could do Shredded Crockpot Chicken or roast it in the oven.

Chicken lettuce wraps work best with large leaf lettuce, like Boston or Bibb, but in a pinch you can use green leaf lettuce or even romaine or iceberg.

This chicken mango salad is so easy. It requires a good bit of chopping since everything is fresh, but you just toss it all in a large bowl and mix well.
