Chicken Lettuce Wraps with mango and cilantro are a fresh and healthy way to enjoy chopped chicken salad. There's no mayonnaise, just lime juice and white balsamic vinegar reduction. Use large lettuce leaves and drizzle with Sriracha for a perfect blend of flavors!
We would eat Chicken Salad with Grapes all the time if we could, but given the mayonnaise and sour cream dressing, we try to limit it to special occasions.
This chicken mango salad, however, is light and fresh and has no mayonnaise at all. And it makes the best chicken lettuce wraps.
Best chicken for lettuce wraps
You can use any chicken in this recipe, but I like rotisserie chicken because it has such good flavor and it's easy. If you want to use just chicken breasts, you could do Shredded Crockpot Chicken or roast it in the oven.
Chicken lettuce wraps work best with large leaf lettuce, like Boston or Bibb, but in a pinch you can use green leaf lettuce or even romaine or iceberg.
Ingredients for chicken mango salad
- Cooked chicken
- White balsamic vinegar reduction - I use one like this but you could also make your own
- Salt and pepper
- Avocado (optional)
- Sriracha sauce (optional)
How to make chicken lettuce wraps
This chicken mango salad is so easy. It requires a good bit of chopping since everything is fresh, but you just toss it all in a large bowl and mix well.
Cook's Tip: Add the avocado just before serving.
Purchase rotisserie chicken or cook your own and cut up enough to make about 4 cups.
All of the fresh ingredients get minced or chopped and then placed in a large bowl.
Stir the salad well and store in an airtight container in the refrigerator for up to 4 days.
When ready to serve your chicken lettuce wraps, add chopped avocado (if using) to the chicken mango salad and gently stir, then place a spoonful on a lettuce leaf. Drizzle with Sriracha sauce and serve.

- 4 cups chopped cooked chicken
- 3 scallions, chopped
- 1 jalapeno, minced
- 1 ½ cups chopped mango
- ½ cup chopped cilantro
- ½ cup chopped cashews
- 1 avocado chopped (optional)
- Zest and juice from one lime
- 2 tablespoons white balsamic vinegar
- Salt and pepper
- Place all ingredients in a large bowl and mix well.
- Store in refrigerator.
