Prosciutto Appetizer—the Super Easy Appetizer Lifesaver!

My go-to appetizer is usually my Pimento Cheese or Cheese Straws, but sometimes I need something really quick that I can pull together at the last minute. That’s why I love this prosciutto appetizer. It requires no chopping and very little cooking. You just brush baguette slices with a little olive oil and place under broiler until toasted. Then spread a dollop of mild goat cheese, or any spreadable cheese, on the bread. Press a couple of arugula leaves into the cheese and top with a piece of prosciutto. And there’s your easy prosciutto appetizer! That’s it! I told you it was easy.

This prosciutto appetizer works great for a football party gathering since it transports well, but it’s also perfect for a girlfriend’s get together. My girlfriends and I love to have simple, easy appetizers when we get together, rather than a big meal. Then we can just get straight to the good part—talking, laughing, drinking wine, and eating.
