We’ve taken the classic S’mores and turned them into S’mores Brownies! And we’ve made it easy for you by using a brownie boxed mix and adding special ingredients. Our version places the graham cracker crumbs mixed with marshmallows on the bottom, giving these brownies a delightful crunchy crust.

We’ve made this recipe half a dozen times and worked out the kinks, so you can trust it works and you’ll soon be serving up perfect S’mores brownies.

I’m pretty partial to my homemade Easy Cocoa Brownies, but sometimes I need to make something a little quicker so I turn to a boxed mix.

That’s what we did with these S’mores brownies. We’ve added a graham cracker and marshmallow crust to a standard brownie mix, and topped the whole thing with more marshmallows.

You’ll love how quickly this recipe comes together, and your people will love the melty, marshmallowy topping over the moist, fudgy brownie.

Testing results for s’mores brownies

  1. We tested this recipe with Duncan Hines chewy fudge family size (9”x13”) brownie mix.
  2. We’ve tested with Ghirardelli bittersweet chocolate chips and milk chocolate chips. Either works fine, so it’s a matter of taste preference.
  3. You will need to work quickly with the graham cracker mixture, as it gets much less pliable as it cools.

How to make s’mores brownies

  1. Heat butter and marshmallows until melted, then stir in graham cracker crumbs.
  2. Press graham cracker mixture into the bottom of the pan.
  3. Prepare brownie mix and spread batter over the graham cracker crust.
  4. Bake brownies, then top with marshmallows and broil until golden. Top warm brownies with remaining chocolate chips.

S’mores Brownies Recipe

  • cup unsalted butter
  • 6 cups mini marshmallows, divided
  • 1 ½ cups graham cracker crumbs

  • 2 tablespoons chocolate chips

Instructions 

  • Preheat the oven to 350. Line a 9×13-inch pan with parchment paper, with an inch hanging over the sides.
  • In a medium saucepan, melt butter and 3 cups marshmallows over medium low heat, stirring constantly.
    1/3 cup unsalted butter, 6 cups mini marshmallows, divided

  • Once butter and marshmallows are melted together add graham cracker crumbs and stir to combine.

  • Transfer graham cracker crumb mixture to the 9×13-inch pan and, using a rubber spatula, press to cover the bottom of the pan. Set aside.

  • Prepare the brownie mix according to the package directions.

  • Pour brownie batter over the graham cracker crust.

  • Bake 25 minutes, or according to package directions, until a toothpick inserted 2” from the edge comes out clean.

  • When the brownies are done, remove from the oven and turn on the broiler, keep the oven rack in the middle.
  • Top brownies with remaining 3 cups marshamllows. Return to the oven and broil for about 1 minute, until the marshmallows are golden brown.

  • Remove the brownies from the oven and top with chocolate chips.

Notes

  • If you want to dig in to these while they are still warm (and you will) use a plastic knife, or a knife sprayed with cooking spray (you may need to reapply as you cut).
  • Watch the marshmallows closely under the broiler! They will burn quickly. They should be golden brown in about a minute. I recommend checking every 30 seconds or so until they are done.

Store up to four days in an airtight container at room temperature.

Can I freeze S’mores brownies?

You can freeze S’mores brownies, but we suggest omitting the marshmallow topping if you’re planning to freeze them. Place the brownies on a parchment-paper-lined baking sheet in the freezer until frozen. Then wrap in parchment or wax paper and place in a freezer-safe container.

When ready to serve, thaw overnight in the refrigerator and prepare the marshmallow topping as directed.

Can I use Hershey’s bars instead of chocolate chips?

You can chop up Hershey’s bars and sprinkle them over the brownies rather than chocolate chips if you want to keep these s’mores brownies a little more traditional.
