A couple of weeks ago, my friend Tracy and I walked along the Atlanta Beltline to get our exercise for the day. Then we rewarded ourselves by stopping at Victory Sandwich Bar for a beer.

We also had their amazing Pimento Cheese with BACON JAM and this simple Chickpea Salad. The Beltline is so awesome because it sits along several excellent choices for stopping, either for food, drinks, or even shopping. We walked to Ponce City Market and Piedmont Park, and enjoyed a glorious Atlanta spring day.

But back to the important things: You read that correctly—bacon jam just lolling atop creamy pimento cheese. That was some amazing stuff. And this easy chickpea salad was pretty good too.

Chickpea Salad Recipe

The capers are what make this simple chickpea salad recipe shine and stand out from all the other chickpea salads in the lineup. Capers are briny and slightly salty, with a delicious tang that livens up almost anything.

Add a little red onion and some fresh parsley, along with a zesty vinaigrette—Victory Sandwich uses sherry but I used lemon—and you have a great quick and easy chickpea salad for lunch or as a side for dinner.

Chickpea Salad Recipe

Chickpea salad that’s super easy and healthy, with just chickpeas, parsley, onion, and capers, mixed with a lemon vinaigrette.

Ingredients 

  • 2 cans chickpeas, rinsed and drained
  • cup chopped fresh parsley
  • 2-3 tablespoons finely minced red onion
  • 1 3.5 oz. jar capers, drained
  • cup lemon vinaigrette
  • Good splash of red wine vinegar
  • Salt/pepper to taste

Instructions 

  • Gently stir ingredients together. Store in refrigerator.

      So sorry–I changed recipe card providers and the links disappeared. I’ve added back the links to the Lemon Vinaigrette, but if you don’t want to make homemade then a bottled red wine or garlic vinaigrette would be perfect!
