Breakfast Taquitos are one of my favorite things to make in the air fryer. I whisk the secret seasonings right into the raw eggs instead of shaking them over the filling later. Then it’s 8 minutes in the basket, one flip halfway, and they come out golden all over. I freeze them, and my husband grabs one on the way out the door in the mornings. Perfect grab-and-go breakfast!


Listen, I am not a morning person. I like to get up and listen to soft piano music (thanks, Joan), drink my coffee, read the news, and play Wordle. I don’t like to talk, and I don’t like to cook. But obviously, sometimes I have to do the latter.
The great thing about these breakfast taquitos is that they keep well in the freezer, which is my favorite kind of breakfast — the kind where I’m just reheating something and not actively measuring and cooking!
David likes to take one of these out of the freezer early in the morning and reheat it in the toaster oven (ours has an air fryer function), and take it with him when he heads to the golf course. And the kids love it when I bring some over, and they can have grab-and-go breakfast before school.
Testing results for breakfast taquitos
- I tested these with sausage and bacon, and we really like them either way. It depends on who I’m making them for as to which one I use. For my husband and myself, I go with the turkey bacon since it’s a little better for you. For the kids, I just use regular crumbled breakfast sausage because they don’t like the turkey bacon.
- My Breville Smart Oven has a large basket, so I’m able to lay several taquitos out in a single layer. Only put as many in your basket as you can do in a single layer.
- We found that these taquitos lose their crisp edge fairly quickly. If you need to make them in advance, you can wrap them in foil and reheat in the air fryer for a couple of minutes.

Ingredient notes
Here are a few things to know about the ingredients in this recipe.

Eggs and whole milk. Six eggs and a half cup of whole milk make soft curds that stay tender through a second round of heat in the air fryer. Skim milk will work, but whole milk gives you a richer scramble.
The seasoning blend. Steak seasoning is my secret! Most steak blends are salt, pepper, garlic, and a little paprika, so it seasons the eggs without pushing them toward taco territory. With that said, you can certainly just use salt and pepper, and they’ll be just fine.
Diced green chiles. Two tablespoons is enough for mild warmth and a little tang across all six taquitos. Drain them well, because wet chiles make the filling loose and harder to roll tight.
Turkey bacon. Six pieces, cooked and diced small.
Shredded cheddar. A full cup, sprinkled over the filling once it’s already in the tortilla rather than stirred into the eggs. Melting it right against the tortilla helps hold the roll shut.
Extra-soft flour tortillas. Taco-sized, and I like the extra soft kind because they roll easier. Standard flour tortillas tend to crack at the fold when you roll them tight.
Olive oil spray. A light olive oil spray on both sides is what turns the tortilla golden instead of dry and leathery.

- Whisk the eggs with the milk and seasonings, then scramble them softly in a nonstick skillet over medium heat.
- Stir the green chiles and the cooked turkey bacon into the finished eggs.
- Spoon the filling down the center of each tortilla, sprinkle with cheddar, and roll it up tight.
- Spray the rolled taquitos with oil and air fry, flipping and spraying again partway through, until golden.
- Serve hot with salsa, sour cream, and hot sauce.
Air fryer time and temperature
Set the air fryer to 365 degrees F and give the taquitos 5 minutes, then flip them with tongs, spray them again, and cook for another 2 to 3 minutes. That puts total time in the basket at 7 to 8 minutes. They’re ready when the tops are golden, and the seams have set.
This may seem like a low temperature to use in the air fryer, but keep in mind that everything inside the tortilla is already cooked, so the air fryer is only crisping the shell. If you turn up the temp, the outside browns before the cheddar in the middle has melted, which leaves you with a crisp tortilla wrapped around a cold pocket of shredded cheese.
And even though the air fryer circulates the air, you still need to flip these taquitos. Whichever side is resting against the basket doesn’t get much moving air, so it stays pale and a little soft while the top browns. Turning them at the 5-minute mark evens that out.
They also need a single layer with a little space around each one. Six taco-sized taquitos fit most standard baskets in one go, but a compact basket won’t hold six, so you’ll have to cook them in rounds. Air has to reach every surface, or you get steam instead of browning.
Variations
- Breakfast sausage. Cook and crumble it in place of the turkey bacon. It brings more fat, so drain it well before it goes into the eggs.
- Pepper jack instead of cheddar. More heat, and it melts a little softer.
- More heat. Double the green chiles, or stir a few dashes of hot sauce into the eggs before they’re scrambled.
- Peppers and onion. Soften a small diced onion and half a diced bell pepper in the skillet first, then pour the eggs in over them.
- Meatless. Leave the bacon out entirely. The seasoned eggs, cheese, and chiles are plenty on their own.
- Smaller taquitos. Street taco tortillas make a smaller roll and stretch the filling further. Watch them closely, since they may brown faster.
Make-ahead and storage
Make ahead. These are meant to be eaten right away, but you can put them together in advance. Cook the eggs and roll the tortillas, then heat in the air fryer just before serving. If you need something you can do the night before, try my Overnight Breakfast Casserole.
Reheating taquitos in the air fryer
Wrap the taquitos in foil and air fry at 350 degrees F for 3 to 4 minutes. That’s warm enough to bring the tortilla back and short enough that the eggs don’t turn rubbery. The microwave is faster, but the tortilla comes out soft and stays that way, so the air fryer is worth the extra couple of minutes.
What to serve with taquitos
Salsa, sour cream, and hot sauce are the three that belong on the plate, and setting all three out in small bowls lets everybody build their own bite. Sliced avocado or a bowl of cut fruit rounds it into a full breakfast without needing anything else.

- 6 extra-soft flour tortillas, taco sized
- 1 cup shredded cheddar cheese

Instructions
- In a mixing bowl, combine 6 large eggs, 1/2 cup whole milk, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon steak seasoning, and 1/4 teaspoon ground cumin. Whisk well.
- Heat a nonstick skillet over medium heat and add the egg mixture. Run a spatula around the edges until curds form. Remove the skillet from the heat as soon as the eggs are set.
- Stir 2 tablespoons diced green chiles, drained and 6 pieces turkey bacon, cooked and diced into small pieces, into the scrambled eggs.
- Spoon 2 to 3 tablespoons of the egg mixture down the center of a tortilla and sprinkle with cheddar cheese. Roll the tortilla tightly and set it aside.
- Repeat with the remaining 5 tortillas.
- Preheat the air fryer to 365 degrees F.
- Place the rolled taquitos in the air fryer basket in a single layer, seam side down, and spray lightly with cooking oil. Air fry for 5 minutes at 365 degrees F.
- Flip the taquitos with tongs, spray lightly with cooking oil again, and air fry for another 2 to 3 minutes, until golden brown. Serve hot with salsa, sour cream, and hot sauce.

Storage
Wrap leftovers in foil and keep them in the refrigerator. The tortilla softens overnight, so I recommend reheating in the air fryer.
Not if you’re using the extra-soft flour tortillas this recipe calls for. They roll straight from the package without cracking. If yours feel stiff, ten seconds in the microwave under a damp paper towel makes them pliable enough to roll tight.
Yes, as long as you spray them lightly with oil on both sides. A dry tortilla just dehydrates in the air fryer and turns leathery instead of crisp. The oil is what lets the surface brown and blister at 365 degrees F.
Usually one of two things: too much filling, or too loose a roll. Stay at 2 to 3 tablespoons per tortilla and roll them snug, then set them in the basket seam side down so their own weight holds the seam closed for the first few minutes.
Yes. Use an unsweetened plain non-dairy milk in the eggs and a dairy-free shredded cheese. The milk is in there for texture rather than flavor, so that swap doesn’t change much.
A half teaspoon of a Montreal-style blend is what’s called for, but a quarter teaspoon of kosher salt, a quarter teaspoon of black pepper, and a pinch of paprika will get you close. Taste and adjust, since some blends run much saltier than others.
