Here’s a great recipe for turkey burgers, full of sun-dried tomatoes, green onions, fresh parsley and other fixins. Give it a try—it’s healthy and flavorful!
Combine ground turkey breast, chopped sun-dried tomatoes, fresh parsley, green onion, one egg, garlic, olive oil, and salt and pepper in a large bowl and mix until well combined. Form into about six or seven patties. You want them to be a little thinner than you might make beef burgers so that they’ll cook pretty quickly on the inside.
I use a grill pan, but you could throw these on the grill, bake them in the oven or broiler, or even use a regular skillet with a little olive oil. On the grill pan they usually brown quickly on the outside, so I get one side nicely browned then flip and turn the heat down to almost low so that the inside has a chance to cook. They take about 10-15 minutes total. Check and make sure the inside meat is done, though it will have a slight pink tinge from the sun-dried tomatoes.
We don’t even use a bun when we eat these, but they would be terrific on a bun with lettuce, tomato, and dijon mustard. We just serve with a green salad or some roasted asparagus and sliced tomatoes. And wine, of course. Enjoy!
