These easy tomato recipes are what I turn to when the counter is covered in tomatoes and I need to use them before they go soft. Some take ten minutes, like tomato salad or cherry tomato salad. Others need more time on the stove, like fried green tomatoes or a sauce that simmers while you do something else. I’ve included recipes that use canned tomatoes too, since good fresh ones aren’t around all year and you still want something worth eating in January.

You’ll find salads, sides, soups, sauces, and a few main dishes here, so there’s something whether you need a quick side for supper or a full meal out of one skillet. My Granny kept sliced tomatoes on the table all summer, salted and nothing else, and that’s still hard to beat. When you’ve got more than you can eat that way, this is where to put them.
