These easy tomato recipes are what I turn to when the counter is covered in tomatoes and I need to use them before they go soft. Some take ten minutes, like tomato salad or cherry tomato salad. Others need more time on the stove, like fried green tomatoes or a sauce that simmers while you do something else. I’ve included recipes that use canned tomatoes too, since good fresh ones aren’t around all year and you still want something worth eating in January.
